English born Chef Matthew first trained at Stanford College, but it was well before beginning his career at Stamford Hotel that he discovered his love for pâtisserie. After furthering his training and gaining an Advanced Pastry qualification, Chef Matthew worked at Hanbury Manor and later Gravetye Manor, where he helped them earn their first Michelin Star. Throughout his career, Matthew has gained experience at the InterContinental Hotel, the American Embassy, and Claridges, as well as working as Head Pastry Chef for the Lehman Brothers, Goldman Sachs and Wentworth Golf Course.


During Chef Matthew’s time at Gravetye Manor as Head Pastry Chef, he catered for the likes of Gordon Ramsay and the Roux brothers. In addition to this, during his 9 years at the American Embassy, Chef Matthew also had the privilege of cooking for the Queen, George Bush and a number of celebrities. On leaving the Embassy he went to work for Claridges, one of London’s finest 5 star hotels.


Chef Matthew has competed in several national competitions, including the Dessert of the Year in which he came fourth.  In addition to this award, he also won a gold medal at the Hotelympia Culinary Salon for his live theatre cookery, which consisted of preparing a banquet for over 1000 people.


Chef Matthew joined Le Cordon Bleu London in 2010 as Pâtisserie Teaching Chef.
